I love to find new recipes and when I see something I like and haven't tried I can't wait to try it. This happened with Falafel. It was more than 8 years ago since I've had Falafel in the Netherlands. It's a vegetarian dish. The Falafel is made with chickpeas and herbs and baked in a pan. The pita's are filled with lettuce, cucumber, tomato and some pieces of Falafel and topped with cucumber/garlic/yoghurt sauce. It's really delicious!

390 gr flour
7.5 gr teaspoons salt
8 gr sugar or honey
12 gr yeast
295 – 350 gr water, roughly at room temperature
24 gr vegetable oil
Mix all ingredients until it is smooth and soft. Place the dough in a slightly oily covered bowl and leave, covered with plastic, until it has doubled in size or for 90 minutes.
Divide into 8 pieces, make balls and let rest for 20 minutes.
Pre heat the oven to 200C.
Roll each piece out to approx.. 3 cm thick.
Place the pitas on the baking stone and bake for 3 - 5 minutes, depending on your oven. The pitas should blow up.
Fill the pitas with falafel and sauce. Enjoy your meal.
